Abstract:
(EN) The present invention relates to a sweetener containing an enzyme-treated stevia composition and having improved sweetness, the sweetener being characterized by containing 90 wt% or more of steviol glycoside. The present invention can provide an enzyme-treated stevia sweetener and a product using the same, wherein enzyme-treated stevia is produced by simply performing only a sugar addition reaction without a purification procedure using an existing porous adsorption resin (aromatic-based or styrene type) while cyclodextrin is used as a glycosylation material of a stevia extract (steviol glycoside), and allowing the enzyme-treated stevia to be used as an ingredient and a reagent for a sweetener, a flavor enhancer, and a flavor modifier in a variety of confectionery, beverages (including alcoholic beverages), food, products, and the like.
(FR) La présente invention concerne un édulcorant contenant une composition de stevia traitée par enzyme et ayant une sucrosité améliorée, l'édulcorant étant caractérisé en ce qu'il contient au moins 90 % en poids de glycoside de stéviol. La présente invention permet d'obtenir un édulcorant à base de stevia traitée par une enzyme et un produit l'utilisant, la stevia traitée par enzyme étant produite par simple réalisation d'une seule réaction d'ajout de sucre sans processus de purification à l'aide d'une résine d'adsorption poreuse existante (de type à base aromatique ou styrène) et la cyclodextrine étant utilisée comme matière de glycosylation d'un extrait de stevia (glycoside de stéviol). L'invention permet à la stevia traitée par enzyme de s'utiliser comme ingrédient et réactif pour un édulcorant, un exhausteur de goût et un modificateur d'arôme dans une multitude de confiseries, de boissons (y compris des boissons alcoolisées), des aliments, des produits et analogues.
(KO) 본 발명은 스테비올 배당체를 90 중량% 이상 포함하는 것을 특징으로 하는 감미질이 개선된 효소처리 스테비아 조성물이 함유된 감미료에 관한 것으로서, 스테비아 추출물(스테비올 배당체)의 당전이 반응(glycosylation) 물질로 사이클로덱스트린을 사용하면서 기존의 다공성의 흡착수지(방향족계, Styrene Type)를 이용한 정제과정 없이 간단히 당부가 반응만 실시해 효소처리 스테비아를 생산하고, 이를 다양한 제과, 음료(알콜음료 포함), 식품, 제품 등의 감미제, 풍미 강화제 및 풍미 변형제의 성분 및 시약으로서 사용 가능하게 하는 효소처리 스테비아 감미료와 그 제품을 제공할 수 있다.
