Abstract:
(EN) Provided is a method for manufacturing a long-life brewed alcoholic beverage by a filtration process with the use a porous membrane involving a washing step, whereby a high tolerance (chemical tolerance) to a washing liquor (a chemical solution) and a good filtration performance are achieved. A method for manufacturing a second brewed alcoholic beverage which comprises: a filtration step for passing a first brewed alcoholic beverage, which contains a yeast and a high-molecular substance or starch component produced through fermentation by the yeast, through a porous membrane, which is formed of a resin having a three-dimensional network structure, to thereby separate the second brewed alcoholic beverage from the yeast; and a washing step for passing a washing liquor through the porous membrane or immersing the porous membrane in the washing liquor to thereby wash the inside of the porous membrane, said method being characterized in that, in an SEM image of a cross section along the membrane thickness direction of the porous membrane, the sum of the areas of resin parts with an area of 1 μm2 or smaller amounts to 70% or more relative to the total area of resin parts, and the washing liquor is an aqueous solution containing 0.01-0.5 wt% inclusive of sodium hypochlorite or 0.1-1 wt% inclusive of a peroxide.
(FR) L'invention concerne un procédé pour la fabrication d'une boisson alcoolisée brassée présentant une longue durée de vie, par un processus de filtration à l'aide d'une membrane poreuse mettant en jeu une étape de lavage, ce qui permet d'obtenir une tolérance élevée (tolérance chimique) à une liqueur de lavage (une solution chimique) et une bonne performance de filtration. Le procédé pour la fabrication d'une seconde boisson alcoolisée brassée comprend : une étape de filtration consistant à faire passer une première boisson alcoolisée brassée, qui contient une levure et une substance de masse moléculaire élevée ou un composant amidon produits par fermentation par la levure, à travers une membrane poreuse, qui est constituée d'une résine ayant une structure de réseau tridimensionnel, pour ainsi séparer la seconde boisson alcoolisée brassée de la levure ; et une étape de lavage consistant à faire passer une liqueur de lavage à travers la membrane poreuse ou à immerger la membrane poreuse dans la liqueur de lavage pour laver ainsi l'intérieur de la membrane poreuse, ledit procédé étant caractérisé en ce que, dans une image au MEB d'une section transversale le long de la direction de l'épaisseur de membrane de la membrane poreuse, la somme des surfaces de parties en résine ayant une surface inférieure ou égale à 1 μm2 s'élève à 70 % ou plus par rapport à la surface totale des parties en résine et la liqueur de lavage est une solution aqueuse contenant 0,01 à 0,5 % en poids bornes comprises d'hypochlorite de sodium ou 0,1 à 1% en poids bornes comprises d'un peroxyde.
(JA) 洗浄工程を含む多孔質膜を用いたろ過方法において、洗浄液(薬液)に対する耐性(薬液耐性)、ろ過性能に優れ、高寿命の醸造酒の製造方法の提供。以下の工程:3次元網目構造の樹脂から構成される多孔質膜に、酵母、及び該酵母による発酵により産生された高分子物質又は澱成分を含有する第一の醸造酒を通過させて、該酵母から第二の醸造酒を分離するろ過工程;及び該多孔質膜に洗浄液を通過又は浸漬させて、該多孔質膜の内部を洗浄する洗浄工程;を含む第二の醸造酒の製造方法であって、該多孔質膜の膜厚方向断面のSEM画像における、1μm以下の面積を有する樹脂部の面積の合計が、該樹脂部の総面積に対して70%以上であり、該洗浄液が、0.01重量%以上0.5重量%以下の次亜塩素酸ナトリウム又は0.1重量%以上1重量%以下の過酸化物を含む水溶液であることを特徴とする前記第二の醸造酒の製造方法。
