Abstract:
(EN) A process of making ham is disclosed herein, which includes injecting at least a whole piece of raw meat with an essentially nitrite-free mixture comprising water and salt, at least a polyphenol, and optionally an acidulant, followed by further processing steps, namely tenderization, churning, molding and cooking, to thereby obtain an essentially nitrite-free ham, whose color and microbiological stability are comparable to those of a corresponding ham obtained with a conventional process using nitrites as preservatives.
(FR) L'invention concerne un procédé de fabrication de jambon, qui comprend l'injection d'au moins une pièce entière de viande crue avec un mélange essentiellement sans nitrite comprenant de l'eau et du sel, au moins un polyphénol, et éventuellement un acidulant, suivi d'autres étapes de traitement, à savoir l'attendrissement, le barattage, le moulage et la cuisson, afin d'obtenir un jambon sensiblement sans nitrite, dont la couleur et la stabilité microbiologique sont comparables à celles d'un jambon correspondant obtenu avec un procédé classique utilisant des nitrites comme conservateurs.
