(EN) The invention relates to a method and device for producing a chocolate product, comprising at least the following steps: a) providing a mass (3) to be conched, b) conching the mass (3) provided according to step a), c) adding, during conching according to step b), a coolant (7) to the mass (3).
(FR) Procédé et dispositif de fabrication d’un produit chocolat comportant au moins les étapes suivantes consistant à : a) préparer une pâte à concher (3), b) concher la pâte (3) préparée conformément à l’étape a), c) ajouter un agent de refroidissement (7) à la pâte (3) pendant le conchage conformément à l’étape b).
