Abstract:
(EN) The invention relates to an ambient-stable drinkable fermented dairy product comprising a fermented dairy composition, including inactivated ferments, 0.45 to 0.60 wt% of carboxymethyl cellulose, 0.015 to 0.030 wt% of gellan gum, 0.45 to 0.60 wt% of pectin, 0.35 to 0.55 wt% of waxy starch, wherein said product has a pH of 4.15 to 4.3, a milk protein content of 2.3 to 3.0 g/100mL and a fat content of 1.8 to 4.0 g/100mL, and a process for making it.
(FR) L'invention concerne : un produit laitier fermenté à boire stable en condition ambiante comprenant une composition laitière fermentée, incluant des ferments inactivés, de 0,45 à 0,60 % en poids de carboxyméthylcellulose, de 0,015 à 0,030 % en poids de gomme gellane, de 0,45 à 0,60 % en poids de pectine, de 0,35 à 0,55 % en poids d'amidon glutineux, ledit produit ayant un pH de 4,15 à 4,3, une teneur en protéines de lait de 2,3 à 3,0 g/100 ml et une teneur en graisse de 1,8 à 4,0 g/100 ml; et son procédé de fabrication.
