Abstract:
(EN) A method of processing a fruit or vegetable is described. The method includes contacting a fruit or vegetable in an optimizer with a first deacidified juice, the first deacidified juice including at least one bulking agent and a sugar concentration that is at least about equal to the sugar concentration in the fruit or vegetable, under conditions sufficient to transfer acids from the fruit or vegetable to the first deacidified juice and bulking agent from the first deacidified juice to the fruit or vegetable, thereby producing an acidified juice and an infused fruit or vegetable product. The method also includes removing acids from the acidified juice to produce a second deacidified juice, mixing the second deacidified juice with at least one bulking agent, and, optionally, recycling the second deacidified juice comprising at least one bulking agent to the optimizer.
(FR) L'invention concerne un procédé de traitement d'un fruit ou d'un légume. Le procédé comprend la mise en contact d'un fruit ou d'un légume dans un dispositif de traitement d'optimisation avec un premier jus désacidifié, le premier jus désacidifié comprenant au moins un agent de charge et une concentration en sucre qui est au moins approximativement égale à la concentration en sucre du fruit ou du légume, dans des conditions suffisantes pour permettre le transfert des acides du fruit ou du légume vers le premier jus désacidifié et de l'agent de charge du premier jus désacidifié vers le fruit ou le légume, ce qui permet de produire un jus acidifié et un produit à base de fruit ou de légume infusé. Le procédé comprend également l'élimination des acides hors du jus acidifié pour produire un second jus désacidifié, le mélange du second jus désacidifié avec au moins un agent de charge et, éventuellement, le recyclage du second jus désacidifié comprenant au moins un agent de charge au niveau du dispositif de traitement d'optimisation.
