(FR) PROCÉDÉ DE PASTEURISATION D'ALIMENTS
Abstract:
(EN) It describes a method for treating food where inside a packaging (2), made of a material configured for containing a gas- mixture, a food product (t) and a gas mixture (3) comprising at least carbon dioxide are inserted. Then on the sealed packaging a uniform pressure, between 4 MPa and 20 MPa, is applied (106) such to compress the food. During application of the pressure the packaging is maintained at a temperature between 25 °C and 50°C.
(FR) La présente invention concerne un procédé de traitement d'aliments dans lequel, à l'intérieur d'un emballage (2), constitué d'un matériau configuré pour contenir un mélange gazeux, un produit alimentaire (t) et un mélange gazeux (3) comprenant au moins du dioxyde de carbone sont insérés. Ensuite, une pression uniforme, comprise entre 4 MPa et 20 MPa, est appliquée (106) à l'emballage scellé de façon à comprimer l'aliment. Pendant l'application de la pression, l'emballage est maintenu à une température comprise entre 25 °C et 50 °C.
