The present invention relates to an oven (1) comprising a cooking chamber (2) in which the materials to be cooked are placed, a body (3) enclosing the cooking chamber, with the front side being shaped as an open box, a vapor generator (4) provided on the body, enabling vapor transmission to the cooking chamber (2), at least one discharge orifice (5) leading to the cooking chamber (2), and a fan (6) enabling the process air in the cooking chamber (2) to be discharged from the cooking chamber (2) by being passed through the discharge orifice (5), a vapor discharge system (10) having a mixing chamber (8) comprising at least one suction opening (7) leading to the outer environment, an air duct (9) extending between the discharge orifice (5) and the mixing chamber (8), and the fan (6) provided in the mixing chamber (8), enabling mixing in the mixing chamber (8) the air drawn from the outer environment with the process air drawn through the air duct (9).

La présente invention concerne un four (1) comprenant une chambre de cuisson (2) dans laquelle les matériaux à cuire sont placés, un corps (3) renfermant la chambre de cuisson, son côté avant prenant la forme d'une boîte ouverte, un générateur de vapeur (4) agencé sur le corps et permettant la transmission de vapeur vers la chambre de cuisson (2), au moins un orifice d'évacuation (5) menant à la chambre de cuisson (2) et un ventilateur (6) permettant l'évacuation de l'air de traitement dans la chambre de cuisson (2) à partir de la chambre de cuisson (2) au moyen du passage à travers l'orifice d'évacuation (5), un système d'évacuation de vapeur (10) comportant une chambre de mélange (8) comprenant au moins une ouverture d'aspiration (7) menant à l'environnement externe, un conduit d'air (9) s'étendant entre l'orifice d'évacuation (5) et la chambre de mélange (8), et le ventilateur (6) agencé dans la chambre de mélange (8) et permettant le mélange, dans la chambre de mélange (8), de l'air aspiré de l'environnement externe avec l'air de traitement aspiré à travers le conduit d'air (9).
