Abstract:
(EN) Disclosed are processes for producing high protein, Greek yogurt products. Such processes can include a step of concentrating a skim milk product to produce a protein-enriched milk fraction, which then can be combined with one or more additional milk fractions to form a yogurt base. The yogurt base is inoculated with a yogurt culture and fermented, and at least a portion of the acid whey is removed from the fermented product using a ceramic ultrafiltration membrane system to form the Greek yogurt product.
(FR) L'invention concerne des procédés de fabrication de produits de yaourt grec à haute teneur en protéines. De tels procédés peuvent comprendre une étape de concentration d'un produit de lait écrémé pour produire une fraction de lait enrichie en protéines, qui peut ensuite être combinée avec une ou plusieurs fractions de lait supplémentaires pour former une base de yaourt. La base de yaourt est inoculée avec une culture de yaourt et fermentée, et au moins une partie du lactosérum acide est retirée du produit fermenté à l'aide d'un système à membrane d'ultrafiltration céramique pour former le produit de yaourt grec.
