Abstract:

The frozen meat sauce according to the present invention includes a frozen product of a mixture of a heat-sterilized ground-meat sauce and a non-heat-sterilized ingredient. The same ingredient as the heat-sterilized ground-meat sauce, except that the ingredient is not heat-sterilized, is favorably used as the non-heat-sterilized ingredient. It is preferred that the heat-sterilized ground-meat sauce be a heat-sterilized product obtained by heating a ground-meat sauce containing ground meat and water to the temperature of 105°C or higher. The content of the heat-sterilized ground-meat sauce in the mixture is preferably 4-60 mass%.

La sauce à la viande congelée de l'invention contient un produit congelé d'un mélange à base d'une sauce à la viande hachée stérilisée à la chaleur et d'un ingrédient non stérilisé à la chaleur. De préférence, un ingrédient similaire à ladite sauce à la viande hachée stérilisée à la chaleur excepté sur le fait qu'il n'est pas stérilisé à la chaleur, peut être mis en œuvre en tant qu'ingrédient non stérilisé à la chaleur. De préférence, ladite sauce à la viande hachée stérilisée à la chaleur consiste en un produit stérilisé à la chaleur tel que la température de la sauce à la viande hachée contenant une viande hachée et de l'eau est supérieure ou égale 105°C. De préférence, la teneur en sauce à la viande hachée stérilisée à la chaleur dans ledit mélange, est comprise entre 4 et 60% en masse.
