Abstract:
(EN) This fish processing knife comprises a handle (14) and a blade (12), and is provided with a J-shaped blade section (26) formed curvingly in a J shape at the point (24) of the blade (12). The angle at which lines of extensions from edges at both ends of the J-shaped blade section (26) intersect is 45 to 70 degrees. The fish processing knife has a belly section (28) on the edge opposite that of the point (24) of the J-shaped blade section (26), and between the belly section (28) and a blade base section (18) is provided a wavy cutting section (22) wherein is formed a wavy cutting edge. The spine section (30) of the blade is provided with a scale removal section (32) toward the point (24). The scale removal section (32) is formed so that a line of extension drawn therefrom toward the handle (14) is progressively farther spaced from the handle (14).
(FR) Ce couteau de traitement de poisson comprend une poignée (14) et une lame (12), et est pourvu d'une section de lame en forme de J (26) formée en courbure en forme de J au point (24) de la lame (12). L'angle au niveau duquel des lignes d'extensions à partir des bords aux deux extrémités de la section de lame en J (26) se croisent est de 45 à 70 degrés. Le couteau de traitement de poisson a une section ventrale (28) sur le bord opposé à celui du point (24) de la section de lame en forme de J (26), et entre la section de ventre (28) et une section de base de lame (18) est disposée une section de coupe ondulée (22) dans laquelle est formé un bord de coupe ondulé. La section de colonne vertébrale (30) de la lame est pourvue d'une section d'élimination d'échelle (32) vers le point (24). La section d'élimination d'échelle (32) est formée de telle sorte qu'une ligne d'extension tirée à partir de celle-ci vers la poignée (14) est progressivement plus éloignée de la poignée (14).
