Abstract:
(EN) The present invention addresses the problem of providing a blooming and grain formation-suppressing agent which effectively suppresses blooming and grain formation caused by fats and oils contained in an oily food. Provided is an oil/fat composition which satisfies requirements (a) to (c). (a) The content of C24-30 is 0.5-12 mass%. (b) The total content of HMM, HLM and HLL is 17-50 mass%. (c) The total content of HHM and HHL is 17-40 mass%.
(FR) La présente invention aborde le problème de la fourniture d'un agent de suppression du blanchiment et de la formation de grains qui supprime efficacement le blanchiment et la formation de grains provoqués par les graisses et les huiles contenues dans un aliment gras. L'invention concerne une composition d'huile/graisse qui respecte les exigences (a) à (c). (a) La teneur en C24-30 est de 0,5 à 12 % en masse. (b) La teneur totale en HMM, HLM et HLL est de 17 à 50 % en masse. (c) La teneur totale en HHM et HHL est de 17 à 40 % en masse.
(JA) 本発明の課題は、油性食品に含まれる油脂に由来するブルームおよびグレインの発生を効果的に抑制する、ブルームおよびグレインの抑制剤を提供することである。 本発明は、以下の条件(a)~(c)を満たす、油脂組成物である。 (a)C24~30の含有量が0.5~12質量%である。 (b)HMM、HLMおよびHLLの含有量の合計が17~50質量%である。 (c)HHMおよびHHLの含有量の合計が17~40質量%である。
