Abstract:
[Problem] To provide a method for manufacturing a processed food wherein the generation of a sulfur odor or the addition of an unpleasant flavor such as an accumulated sulfur odor is inhibited. [Solution] Provided is a method for manufacturing a processed food wherein the generation of a sulfur odor is inhibited, said method comprising: (A) a step for bringing a solid food material, which contains protein as a main nutritional component, into contact with transglutaminase and/or a reducing sugar; and (B) a step for thermally sterilizing the food material having been treated in step (A).
