Abstract:
(EN) A method for detecting a food spoilage microbe in a food sample comprising contacting a food sample with a peptide substrate, comprising a fluorescent agent having an emission wavelength of 650-900 nm, a non-fluorescent agent having an absorption wavelength of 650-900 nm, for quenching said emission of said first fluorescent agent, and a cleavage site located between said fluorescent agent and said non-fluorescent agent, b) monitoring the fluorescence of the sample containing the peptide substrate in step a), wherein an increase in fluorescence is indicative for the presence of food spoilage microbes.
(FR) L'invention concerne une méthode de détection d'un microbe de dégradation alimentaire dans un échantillon alimentaire comprenant a) la mise en contact d'un échantillon alimentaire avec un substrat peptidique, comprenant un agent fluorescent ayant une longueur d'onde d'émission de 650-900 nm, un agent non fluorescent ayant une longueur d'onde d'absorption de 650-900 nm, pour la désactivation de ladite émission dudit premier agent fluorescent, et un site de clivage situé entre ledit agent fluorescent et ledit agent non fluorescent, b) la surveillance de la fluorescence de l'échantillon contenant le substrat peptidique de l'étape a), une augmentation de la fluorescence étant indicative de la présence de microbes de dégradation alimentaire.
