Abstract:
The present invention relates to a method for obtaining a raw seed with a reduced cooking time, wherein, prior to cooking, the raw seed is subjected to a step of resting in an aqueous solution of a natural, synthetic or food acid, with a pH between 0.1 and 7. The invention also relates to the seed or seeds obtained using said method, and to food products containing said seeds.
