Abstract:
(EN) Methods and systems for making a high-purity a-lactalbumin composition are described. The composition may be made by providing a whey protein mixture, and adding an alkaline solution to the mixture to make the mixture alkaline and promote the aggregation of B-lactoglobulin proteins. The alkaline whey protein mixture is filtered into a β-LG aggregate composition and a a-LA enriched composition. A final a-lactalbumin enriched composition sourced from the a-LA enriched composition is dried into the high- purity a-lactalbumin composition (a powdered dairy composition) that is at least 70 wt.% α-lactalbumin on a protein basis. A protease enzyme may optionally be added to the a- LA enriched composition to form an enzymatically treated a-LA enriched composition that becomes the source of the final α-lactalbumin enriched composition.
(FR) L'invention concerne des procédés et des systèmes pour la fabrication d'une composition d'α-lactalbumine d'une grande pureté. La composition peut être préparée à l'aide d'un mélange de protéines de lactosérum, et en ajoutant une solution alcaline au mélange pour rendre celui-ci alcalin et favoriser l'agrégation des protéines de β-lactoglobuline. Le mélange alcalin de protéines de lactosérum est filtré pour obtenir une composition d'agrégat de β-LG et une composition enrichie en α-LA. Une composition finale enrichie en α-lactalbumine issue de la composition enrichie en α-LA est séchée pour obtenir la composition d'α-lactalbumine d'une grande pureté (une composition laitière en poudre) qui comprend au moins 70 % en poidsd'α-lactalbumine par rapport à l'ensemble des protéines.
