Abstract:
The invention relates to a deep-frying oil and/or deep-frying fat sensor (1) for determining a deep-frying oil and/or deep-frying fat quality, comprising a conductor structure (2), which is fixedly connected at a proximal end to an electronics unit (5), wherein the conductor structure (2) comprises an inner conductor (6) and an outer conductor (7) which are arranged coaxially in relation to one another and both of which are fixedly connected at the proximal end to the electronics unit, wherein the inner conductor (6) is movably guided at at least one free end for the compensation of temperature-related mechanical stresses in the axial direction relative to the outer conductor (7).
