Abstract:
(EN) A process for preparing decolored concentrated fresh momordica grosvenori juice, comprising the following steps: saccharifying fresh momordica grosvenori → selecting and washing the momordica grosvenori → crushing → performing percolation extraction → performing disc-type centrifugation → performing micro-filtration clarification using a ceramic membrane of 0.45μm → performing molecular weight ultra-filtration separation → decoloring using a polyamide resin → decoloring using a decoloring resin → adjusting the pH value using a cationic resin → concentrating using a reverse osmosis membrane → removing residues using a granular activated carbon column → performing micro-filtration clarification using a ceramic membrane of 0.22μm → performing vacuum decompression and concentration so as to obtain an ointment → sterilizing → performing vacuum packaging → obtaining decolored concentrated fresh momordica grosvenori juice. Also provided is the decolored concentrated fresh momordica grosvenori juice prepared by the described process.
(FR) L'invention concerne un procédé de préparation de jus de momordica grosvenori frais concentré décoloré qui comprend les étapes suivantes : la saccharification de momordica grosvenori frais → la sélection et le lavage de momordica grosvenori → le concassage → la réalisation d'une extraction par percolation → la réalisation d'une centrifugation du type disque → la réalisation d'une clarification par micro-filtration au moyen d'une membrane céramique de 0,45 µm → la réalisation d'une séparation à ultra-filtration de poids moléculaire → la décoloration au moyen d'une résine polyamide → la décoloration au moyen d'une résine décolorante → le réglage de la valeur de pH au moyen d'une résine cationique → la concentration au moyen d'une membrane d'osmose inverse → l'élimination de résidus au moyen d'une colonne de charbon actif granulaire → la réalisation d'une clarification par micro-filtration au moyen d'une membrane céramique de 0,22 µm → la réalisation d'une décompression et d'une concentration sous vide de manière à obtenir un onguent → la stérilisation → la réalisation d'un emballage sous vide → l'obtention d'un jus de momordica grosvenori frais concentré décoloré. L'invention concerne également un jus de momordica grosvenori frais concentré décoloré préparé par le procédé selon l'invention.
