Abstract:
The present invention concerns a method for coating a confectionery centre, comprising : a) a step of coating by application of at least a first sugar alcohol syrup having a rheometer-measured viscosity at 60°C in the range between 1600 mPa.s and 120 mPa.s and/or a dry matter content of between 70 and 87% (mass/mass), followed by the application of a first powdered sugar-alcohol composition having a mean particle size D(0.5) less than 600 µm and/or a second powdered sugar alcohol composition having a mean particle size D(0.5) less than 500 µm; b) a finishing step of the coating by application of at least a second sugar-alcohol syrup having a rheometer-measured viscosity in the range between 20 mPa.s and 50 mPa.s and/or a dry matter content of between 50 and 70% (mass/mass), followed by the application of the first and/or second powdered sugar-alcohol composition. The present invention also concerns the confectionery obtained in this way.
