Abstract:
(EN) A method of cooking a food, the method comprising the steps of: a. providing a bed comprising a plurality of hollow particles, wherein the hollow particles are composed of, comprise or consist of a material which is magnetic and/or electroconductive; b. heating the hollow particles in the bed to form a cooking medium in the form of a heated bed of hollow particles, wherein in step b the hollow particles are heated at least partially by electromagnetic induction; c. providing a food, optionally a plurality of snack food precursor elements, in the cooking medium thereby to cook the food to form a coked food, optionally a plurality of cooked snack food pieces, wherein the heated particles transfer heat into the food by thermal conduction; and d. separating the cooked food and the cooking medium.
(FR) L'invention concerne un procédé de cuisson d'un aliment, le procédé comprenant les étapes consistant à : a. fournir un lit comprenant une pluralité de particules creuses, les particules creuses étant composées de, comprenant ou consistant en un matériau qui est magnétique et/ou électroconducteur ; b. chauffer les particules creuses dans le lit pour former un milieu de cuisson sous la forme d'un lit chauffé de particules creuses, dans l'étape b les particules creuses étant chauffées au moins partiellement par induction électromagnétique ; c. fournir un aliment, éventuellement une pluralité d'éléments précurseurs d'aliment d'en-cas, dans le milieu de cuisson pour ainsi cuire l'aliment pour former un aliment cuit, éventuellement une pluralité de morceaux d'aliments d'en-cas cuits, les particules chauffées transférant de la chaleur dans l'aliment par conduction thermique ; et d. séparer l'aliment cuit et le milieu de cuisson.
