Abstract:
(EN) A method for preparing beer concentrate, comprising the steps of: a) feeding a beer or cider (1) stream and a water (H20) stream to a first concentration step comprising diafiltration (A) over a nanofiltration or reverse osmosis membrane to obtain a low alcohol retentate (2) and a permeate (3) comprising alcohol and volatile flavour components, wherein the retentate (2) is characterised by the concentration of unfilterable compounds equal to or higher than 5% (w/w), preferably 10% (w/w), most preferably 15% (w/w), as calculated from density measurement corrected for the alcohol amount; b) Subjecting the permeate comprising alcohol and volatile flavour components (3) to a next concentration step (B) comprising freeze concentration; reverse osmosis; or adsorption to obtain a fraction (4) comprising volatile flavour components (4) and a leftover fraction (5).
(FR) La présente invention concerne un procédé de préparation de concentré de bière, comprenant les étapes consistant à : a) introduire un courant de bière ou de cidre (1) et un courant d'eau (H2O) dans une première étape de concentration comprenant une diafiltration (A) sur une membrane de nanofiltration ou d'osmose inverse afin d'obtenir un rétentat (2) à faible teneur en alcool et un perméat (3) comprenant de l'alcool et des composants aromatiques volatils, le rétentat (2) étant caractérisé par la concentration de composés non filtrables égale ou supérieure à 5 % (p/p), de préférence 10 % (p/p), de manière préférée entre toutes 15 % (p/p), telle que calculée à partir de la mesure de densité corrigée pour la quantité d'alcool ; b) soumettre le perméat (3) comprenant de l'alcool et des composants aromatiques volatils à une étape de concentration suivante (B) comprenant une concentration par congélation ; une osmose inverse ; ou une adsorption afin d'obtenir une fraction (4) comprenant des composants aromatiques volatils (4) et une fraction résiduelle (5).
