Title (EN) NUTRITIONAL COMPOSITION COMPRISING LACTOSERUM PROTEINS OR SOLUBLE MILK PROTEINS THAT IS STABLE TO HEAT TREATMENTS
(FR) COMPOSITION NUTRITIONNELLE COMPRENANT DES PROTÉINES DE LACTOSÉRUM OU DES PROTÉINES SOLUBLES DE LAIT STABLE AUX TRAITEMENTS THERMIQUES
Abstract: front page image
(EN)The present invention concerns a method for preparing a nutritional composition that is stable to heat treatments and comprises between 2 and 9 g of lactoserum proteins or soluble milk proteins to 100 ml of liquid composition or to 100 g of solid and semi-solid composition, and has a pH of between 2 and 4.5, and the composition obtained. According to the invention, the method comprises the following steps: preparing a matrix comprising at least 10% water, by weight, relative to the total weight of the composition, adding glucono delta-lactone to the matrix, hydrolysing the glucono delta-lactone for between 30 minutes and 4 hours, adding a strong food acid before, concomitantly to or after the addition or hydrolysis of the glucono delta-lactone, adding lactoserum proteins or soluble milk proteins to the matrix after the hydrolysis of the glucono delta-lactone when the pH has reached a value of less than 2, heat treatment, and packaging.
