Abstract:
(EN) The present invention relates to a cheese processing and preservation system, comprising a series of stages in which residues, pieces, crumbs and slivers of cheese are grated, rendering the material homogeneous and uniform; the said product is then placed in special containers and cooled in cold storage at a temperature between 0 and 4°C, being left to rest for at least 24 hours. The system comprises a pressing stage in which the product - once a predetermined amount thereof has been extracted from the container and inserted in a foodgrade bag - is pressed, followed by a packaging stage in which the bag with the cheese inside - which has acquired a clearly defined cylindrical shape - is placed in a second bag, which is hermetically sealed to form a vacuum pack, is stored in a cold storage, ready to undergo subsequent industrial processing.
(FR) La présente invention concerne un système de traitement et de conservation de fromage, comprenant une série d'étapes dans lesquelles des résidus, des morceaux, des miettes et des copeaux de fromage sont râpés, ce qui rend le matériau homogène et uniforme ; ledit produit est ensuite placé dans des récipients spéciaux, refroidi dans un stockage à froid à une température comprise entre 0 et 4 °C et laissé reposer pendant au moins 24 heures. Le système comprend une étape de pressage dans laquelle le produit - une fois qu'une quantité prédéterminée de ce dernier a été extraite du récipient et insérée dans un sac de qualité alimentaire - est pressé, suivie d'une étape d'emballage dans laquelle le sac contenant le fromage - qui a acquis une forme cylindrique clairement définie - est placé dans un second sac, qui est hermétiquement scellé pour former un emballage sous vide, est stocké dans un stockage à froid, prêt à subir un traitement industriel ultérieur.
