The invention relates to a brewing system (OM) for continuously or discontinuously obtaining and treating a wort (WO) in beer brewing or in the beverage industry. The wort (WO) is obtained continuously or discontinuously by means of a lautering device (LV) on the basis of the surface filtration principle. In a second device (V2), the wort (WO) obtained in this manner is set to a first temperature (T1) between 0 and 85 °C after the thermal treatment process has concluded, and an enzyme-containing substrate is added by means of an adding device (AD). A first device (WK1) for setting the temperature of the wort (WO) to the first temperature (T1) is arranged downstream of a device (WP) for keeping the wort (WO) hot or for boiling same, and the adding device (AD) is arranged downstream of the first device (WK1) in order to set the temperature of the wort (WO) to the first temperature (T1). The invention further relates to a corresponding method and corresponding applications.
