(EN)The present invention relates to a method, for preparing puffed ginseng having improved functionality and palatability, comprising the steps of: (a) dipping ginseng into carbonated water; (b) adjusting the moisture content of the ginseng to be 5.0-20.0 wt % on the basis of the total weight of the ginseng; and (c) puffing at a pressure of 6-9 kg/cm2 and a temperature of 100-130℃.
(FR)La présente invention concerne un procédé de préparation de ginseng soufflé présentant une fonctionnalité et une sapidité améliorées, comprenant les étapes consistant à : (a) plonger le ginseng dans de l'eau gazeuse ; (b) ajuster la teneur en humidité du ginseng à 5,0 à 20,0 % en poids rapporté au poids total du ginseng; et (c) gonfler à une pression de 6 à 9 kg/cm 2 et à une température de 100 à 130 °C.
