(EN) The present invention relates to a method for extracting curcumin from turmeric by using water as a solvent and processing an emulsifier and ultrasonication. The method can replace the conventional curcumin extraction method using an organic solvent to eliminate the risk of residual organic solvent and extract a high content of curcumin. When lecithin used as an emulsifier in the present invention is treated with ultrasonication, a high content of curcumin can be extracted at a level similar to the extraction method using an organic solvent. In addition, Tween 80 or Tween 20 can extract a high content of curcumin at a level similar to the extraction method using an organic solvent by a single addition without ultrasonication, and can further increase the extraction content of curcumin when treated with ultrasonication.
(FR) La présente invention concerne un procédé d'extraction de curcumine à partir de curcuma en utilisant de l'eau comme solvant et en traitant un émulsifiant et au moyen d'un traitement par ultrasons. Le procédé peut remplacer le procédé d'extraction de curcumine classique utilisant un solvant organique afin d'éliminer le risque de solvant organique résiduel et extraire une quantité élevée de curcumine. Lorsque la lécithine utilisée comme émulsifiant dans la présente invention est traitée par ultrasons, une quantité élevée de curcumine peut être extraite à un niveau similaire à celui du procédé d'extraction utilisant un solvant organique. (KO) 본 발명은 물을 용매로 이용하고 유화제 및 초음파(ultrasonication)를 처리하여 강황으로부터 커큐민을 추출하는 방법으로, 상기 방법은 종래 유기용매를 이용한 커큐민 추출방법을 대체하여 잔류 유기용매의 위험성을 제거하고, 고함량의 커큐민을 추출할 수 있다. 본 발명의 유화제로 사용된 레시틴은 초음파와 함께 처리될 경우, 유기용매를 이용하여 추출한 방법과 유사한 수준으로 고함량의 커큐민을 추출할 수 있다. 또한, 트윈 80 또는 트윈 20은 초음파 처리 없이도 단독 첨가에 의해 유기용매를 이용한 추출방법과 유사한 수준으로 고함량 커큐민을 추출할 수 있으며, 초음파와 함께 처리될 경우 커큐민 추출 함량을 더 증가시킬 수 있다.
