Abstract:
(EN) This method for producing a liquid soybean solution includes: a germination-inducing step for adding a germination-inducing substance to a liquid soybean solution; a first heat treatment step for subjecting the germination-induced liquid soybean solution to a first heat treatment; a cooling step for cooling the liquid soybean solution which has undergone the first heat treatment; a second heat treatment step for subjecting the cooled liquid soybean solution to a second heat treatment; an oxygen treatment step for subjecting the liquid soybean solution which has undergone the second heat treatment to an oxygen treatment; and a sterilization step for sterilizing the liquid soybean solution which has undergone the oxygen treatment.
(FR) L’invention concerne un procédé de fabrication de soja liquide qui inclut : une étape d’induction de germination au cours de laquelle une substance d’induction de germination est ajoutée à un soja liquide ; une première étape de traitement par chauffage au cours de laquelle un premier traitement par chauffage est effectué vis-à-vis du soja liquide après induction de germination ; une étape de refroidissement au cours de laquelle le soja liquide est refroidi après premier traitement par chauffage ; une seconde étape de traitement par chauffage au cours de laquelle un second traitement par chauffage est effectué vis-à-vis du soja liquide après refroidissement ; une étape de traitement enzymatique au cours de laquelle un traitement enzymatique est effectué vis-à-vis du soja liquide après second traitement par chauffage ; et une étape de stérilisation au cours de laquelle le soja liquide est stérilisé après traitement enzymatique.
