Abstract:
The present invention relates to a method for preparing porous red ginseng. The porous red ginseng according to the present invention has a crispy texture and excellent flavor, due to the formation of uniform pores, without additional processes such as the addition of fructose such that the original form or slices of red ginseng can be directly consumed, and has a significantly high ginsenoside content and a low water content, thereby having excellent storability.
