Abstract:
(EN) [Problem] This invention addresses the problem of enhancing the richness of generic processed food and beverage items without imparting a disagreeable flavor and without increasing the calorie count or salt content. The additive to be added in this case is preferably a generic food item that is highly safe. [Solution] An appropriate amount of a yeast extract is added to a generic processed food and beverage item, the yeast extract having a peptide content of 5 wt% or higher, an RNA content of 5 wt% or higher, a free amino acid content of 6 wt% or lower, a glutathione content of 0.5 wt% or higher, and preferably, additionally a dietary fiber content of 15 wt% or higher.
(FR) Le problème décrit par la présente invention est d'améliorer la richesse d'aliments transformés et de boissons génériques sans conférer un arôme désagréable et sans augmenter le nombre de calories ou la teneur en sel. L'additif à ajouter dans ce cas est de préférence un aliment générique qui est très sûr. La solution de l'invention porte sur une quantité appropriée d'un extrait de levure qui est ajoutée à un aliment transformé et à une boisson génériques, l'extrait de levure ayant une teneur en peptide supérieure ou égale à 5 % en poids, une teneur en ARN supérieure ou égale à 5 % en poids, une teneur en acides aminés libres inférieure ou égale à 6 % en poids, une teneur en glutathion supérieure ou égale à 0,5 % en poids, et de préférence, en outre, une teneur en fibres alimentaires supérieure ou égale à 15 % en poids.
(JA) 【課題】課題は、異味を付与することなく、またカロリーや塩分を上げることなく、一般加工飲食品のコクを増強すること。その際に添加するものは、一般の食品であって、安全性の高いものが望ましい。 【解決手段】一般加工飲食品に対し、ペプチド含量が5重量%以上、RNA含量が5重量%以上、遊離アミノ酸含量が6重量%以下、グルタチオン含量が0.5重量%以上、望ましくはさらに食物繊維含量が15重量%以上である酵母エキスを適量添加する。
