Abstract
(EN) Provided are a sweetness and/or saltiness enhancing agent and a method for enhancing sweetness and/or saltiness. This sweetness and/or saltiness enhancing agent includes, as an active ingredient, an oxidized fat that has a peroxide value of 15-180 and contains 10-100 mass% of milk fat. This method for enhancing sweetness and/or saltiness of a food product is characterized by adding to a food product an oxidized fat that has a peroxide value of 15-180 and contains 10-100 mass% of milk fat.
(FR) La présente invention concerne un agent renforçateur de sucrosité et/ou de salinité et un procédé permettant de renforcer la sucrosité et/ou la salinité. Cet agent renforçateur de sucrosité et/ou de salinité comprend, comme principe actif, une matière grasse oxydée qui présente un indice de peroxyde de 15 à 180 et contient de 10 à 100 % en masse de matière grasse de lait. Ce procédé permettant de renforcer la sucrosité et/ou la salinité d'un produit alimentaire est caractérisé en ce qu'il consiste à ajouter à un produit alimentaire une matière grasse oxydée qui présente un indice de peroxyde de 15 à 180 et contient de 10 à 100 % en masse de matière grasse de lait.
