A vehicle HUD display system and method. The system comprises an HUD display, an eyeball tracking sensor and an HUD display adjustment module. The eyeball tracking sensor is used for detecting an eye position of a driver. The HUD display adjustment module calculates, according to the eye position of the driver detected by the eyeball tracking sensor, an offset of a display picture of the HUD display by taking a set best viewing angle as an adjustment target, and adjusts a position of the display picture of the HUD display according to the offset. According to the system and method, by detecting eye positions of a driver, an HUD display interface can be conveniently and rapidly adjusted to the best viewing angle.
