Abstract:
(EN) The present invention provides a modified strain of the bacterium Lactococcus lactis obtainable by a method that comprises a step of fusion of two protoplasts from two Lactococcus lactis parental strains which, compared to the wild type strain of Lactococcus lactis from which they derive, show: (a) an increased ability to produce acetoin and/or 2,3- butanediol (2,3-BDO), and (b) a decreased ability to produce lactic acid, when cultured under aerobic conditions, and wherein the modified strain of Lactococcus lactis has an increased ability to produce 2,3-BDO of at least 20 times the amount produced by the wild type strain, an increased ability to produce acetoin of at least 20 times the amount produced by the wild type strain and a decreased ability to produce lactic acid of at least 10 times the amount produced by the wild type strain, when cultured under aerobic conditions. Also provided are methods to produce acetoin and 2,3- BDO..
(FR) La présente invention concerne une souche modifiée de la bactérie Lactococcus lactis pouvant être obtenue par un procédé qui comprend une étape de fusion de deux protoplastes à partir de deux souches parentales Lactococcus lactis qui, par rapport à la souche sauvage de Lactococcus lactis dont ils dérivent, montrent : (a) une capacité accrue à produire de l'acétoïne et/ou du 2,3-butanediol (2,3-BDO), et (b) une capacité réduite à produire de l'acide lactique, lorsqu'elle est cultivée dans des conditions aérobies, et la souche modifiée de Lactococcus lactis ayant une capacité accrue à produire du 2,3-BDO d'au moins 20 fois la quantité produite par la souche de type sauvage, une capacité accrue de production d'acétoïne d'au moins 20 fois la quantité produite par la souche de type sauvage et une capacité réduite à produire de l'acide lactique d'au moins 10 fois la quantité produite par la souche de type sauvage, lorsqu'elle est cultivée dans des conditions aérobies. L'invention concerne également des procédés de production d'acétoïne et de 2,3-BDO.
