Specifically, the present invention provides an additive for food containing anion-modified cellulose nanofibers, and food containing the additive for food.
(FR)L’invention a pour objet de fournir un additif alimentaire ainsi qu’un aliment comprenant celui-ci, lequel additif alimentaire permet d’améliorer des propriétés physiques et des qualités telles que des propriétés de rétention d’eau, une fermeté, une stabilité de dispersion, ou similaire, lorsqu’il est ajouté à un aliment tel qu’un aliment usiné, ou similaire, et préserve les caractéristiques de texture, de goût, ou similaire, dont l’aliment est initialement doté. Plus précisément, l’invention fournit un additif alimentaire comprenant des nanofibres de cellulose modifiées par des anions, et un aliment contenant celui-ci.
