Abstract:
(EN) Provided is an emulsified seasoning for which storage-related flavor deterioration is suppressed. An emulsified seasoning that is obtained by combining components (A), (B), and (C): 3-20 mass% of an (A) oil/fat-derived omega-3 unsaturated fatty acid; (B) rosmarinic acid; and (C) reduced glutathione. The emulsified seasoning is no more than 0.4 mass% (D) phospholipids.
(FR) L'invention concerne un assaisonnement émulsifié pour lequel la détérioration d'arôme liée au stockage est éliminée. L'invention concerne un assaisonnement émulsifié qui est obtenu en combinant des composants (A), (B) et (C) : de 3 à 20 % en masse d'un acide gras insaturé oméga 3 dérivé d'huile/de graisse (A) ; de l'acide rosmarinique (B) ; et du glutathion (C) réduit. L'assaisonnement émulsifié ne contient pas plus de 0,4 % en masse de phospholipides.
