Abstract:
(EN) Embodiments disclosed herein provide methods for decontaminating food contact surfaces using a fine spray/mist that comprise an antimicrobial composition comprising an organic acid and an organic citrus extract. The spray application reduces the microbiological populations on the surface of food contact surfaces, including potential pathogens, thereby reducing cross-contamination and improving food safety. The composition described herein can be use to target a number of microbiological pathogens, including L. monocytogenes, which is a known cross-contaminant in retail environments such as deli counters and slicers due to its ability to grow at refrigerated temperatures and moist environments making it a known cause of post-processing contamination of ready-to-eat food products.
(FR) L'invention concerne des modes de réalisation des procédés de décontamination de surfaces de contact d'aliments à l'aide d'une pulvérisation/vaporisation qui comporte une composition antimicrobienne contenant un acide organique et un extrait d'agrumes organique. L'application de pulvérisation réduit les populations microbiologiques sur la surface de contact d'aliments, notamment des agents pathogènes potentiels, ce qui réduit la contamination croisée et améliore la sécurité alimentaire. La présente composition peut être utilisée pour cibler un certain nombre d'agents pathogènes microbiologiques, notamment les Monocytogenes l, qui sont des contaminants croisés connus dans des environnements de vente au détail tels que des comptoirs de produits alimentaires en raison de leur capacité à croître à des températures réfrigérées et des environnements humides, ce qui rend ces gents pathogènes microbiologiques une cause connue de contamination post-traitement de produits alimentaires prêts à manger.
