Abstract:
(EN) A fermented milk production method which prevents deterioration of taste during storage is provided. The fermented milk production method suppresses the occurrence and accumulation of hydrogen peroxide in the fermented milk during the fermented milk production process. The method, for maintaining the flavor, physical properties, and color tone of fermented milk, suppresses the occurrence and accumulation of hydrogen peroxide in the fermented milk during the fermented milk production process.
(FR) La présente invention concerne un procédé de production de lait fermenté qui empêche la détérioration du goût pendant le stockage. Le procédé de production de lait fermenté élimine l'apparition et l'accumulation de peroxyde d'hydrogène dans le lait fermenté pendant le processus de production de lait fermenté. Le procédé, pour maintenir l'arôme, les propriétés physiques et le ton de couleur du lait fermenté, élimine l'apparition et l'accumulation de peroxyde d'hydrogène dans le lait fermenté pendant le processus de production de lait fermenté.
