Abstract:
The present invention relates to a method for producing salted mackerel and, more specifically, to a method for producing salted mackerel, comprising: a salt immersion solution preparation step of preparing a salt immersion solution into which mackerel is to be immersed; and a mackerel immersing step of producing salted mackerel by immersing, for a predetermined time, the mackerel in the salt immersion solution prepared in the salt immersion solution preparation step, wherein the salt immersion solution contains a coriander extract, a Zanthoxylum piperitum extract, a camphor tree extract, and the like, has little fishy smell, low sodium content, and improved flavor, and since the coriander extract and the Zanthoxylum piperitum extract are manufactured by using vinegar as an extraction solvent, the texture of the salted mackerel can be improved.
