Abstract:
(EN) The present teachings disclose a process for producing a safe and preserved food. The process includes: (i) introducing a non-live-bacteria preparation on or in a food to produce an activated food, and the non-live-bacteria preparation results from fermentation of fermented bacteria, but the non-live-bacteria preparation is substantially depleted of the fermented bacteria, and the fermented bacteria are bacteria that are living; and (ii) incubating the activated food in presence of the non-live-bacteria preparation to kill and/or inhibit growth of pathogens and/or spoilage microorganisms on and/or in the activated food and thereby producing the safe and preserved food; and wherein the fermented bacteria is anti-pathogen bacteria and/or anti-spoilage bacteria.
(FR) La présente invention concerne un procédé de production d'un aliment sûr et conservé. Le procédé comprend : (i) l'introduction d'une préparation de bactéries non vivantes sur ou dans un aliment pour produire un aliment activé et la préparation de bactéries vivantes résultant de la fermentation de bactéries fermentées, mais la préparation de bactéries non vivantes étant sensiblement dépourvue de bactéries fermentées, et les bactéries fermentées sont des bactéries qui sont vivantes; et (ii) l'incubation de l'aliment activé en présence de la préparation de bactéries non vivantes pour tuer et/ou inhiber la croissance de pathogènes et/ou de micro-organismes de détérioration sur et/ou dans l'aliment activé et produire ainsi l'aliment sûr et conservé; et les bactéries fermentées étant des bactéries anti-pathogènes et/ou des bactéries anti-détérioration.
