Abstract:
(EN) [Problem] To provide: a product obtained through processing a cut of meat, which has rich juicy taste as well as tenderness; and a method for producing the product obtained through processing a cut of meat. [Solution] According to the present invention, at least one selected from xanthan gum, guar gum, and glucomannan that are in powder form is added to a product obtained through processing a cut of meat.
(FR) [Problème] L'invention vise à concevoir un produit obtenu par traitement d'un morceau de viande, qui présente un goût riche et succulent tout en étant tendre; et un procédé de production du produit obtenu par traitement d'un morceau de viande. [Solution] Selon la présente invention, au moins un élément sélectionné parmi la gomme xanthane, la gomme de guar, le glucomannane, qui sont sous forme de poudre, est ajouté à un produit obtenu par traitement d'un morceau de viande.
