Abstract:
(EN) A dry stable composition is provided. The composition comprises one or more viable microorganisms, at least 50% by weight of one or more hydrolyzed proteins and less than 10% by weight of one or more sugars selected from the group consisting of monosaccharides, disaccharides and combinations thereof, each weight percentage based on the total weight of the dry composition. Preferably, the composition comprises no monosaccharide or disaccharide. The composition may further comprise one or more oligosaccharides, one or more polysaccharides, one or more carboxylic acid salts, or a combination thereof. The composition may have viability of at least 1 X 1010 CFU/g, and a viability loss of less than 1 log unit/g after 84 days at a temperature of 40°C and a relative humidity of 33%. Also provided are methods for preparing the dry stable composition.
(FR) La présente invention concerne une composition sèche stable. La composition comprend un ou plusieurs micro-organismes viables, au moins 50 % en poids d'une ou de plusieurs protéines hydrolysées et moins de 10 % en poids d'un ou de plusieurs sucres sélectionnés parmi le groupe comprenant les monosaccharides, les disaccharides et leurs combinaisons, chaque pourcentage en poids étant basé sur le poids total de la composition sèche. De préférence, la composition ne comprend pas de monosaccharide ou de disaccharide. La composition peut en outre comprendre un ou plusieurs oligosaccharides, un ou plusieurs polysaccharides, un ou plusieurs sels d'acide carboxylique, ou une de leurs combinaisons. La composition peut présenter une viabilité d'au moins 1 X 1010 CFU/g, et une perte de viabilité inférieure à 1 unité log/g après 84 jours à une température de 40 °C et une humidité relative de 33 %. L'invention concerne également des procédés permettant de préparer la composition sèche stable.
