Abstract:
(EN) The present invention relates to a stabilized starch obtained by reacting under alkaline conditions a base starch having a protein content of less than 0.4% w/w with a reactant capable of forming active chlorine, wherein the reactant is used in an amount sufficient to provide between 4000 and 8200 ppm of active chlorine during the stabilization reaction.
(FR) La présente invention concerne un amidon stabilisé obtenu par réaction dans des conditions alcalines, d’un amidon de base ayant une teneur en protéines inférieure à 0,4 % en poids avec un réactif capable de former du chlore actif, le réactif étant utilisé en quantité suffisante pour produire entre 4000 et 8200 ppm de chlore actif pendant la réaction de stabilisation.
