Abstract:
(EN) A coagulating agent for filled tofu (filled soybean curd), which comprises a water-in-oil-type emulsion composition in which aqueous phases each containing magnesium chloride are emulsion-dispersed in an oily phase, wherein polyglycerin condensed ricinolate and a phospholipid are contained as emulsifying agents in the coagulating agent for filled tofu, and the contents of magnesium chloride and the phospholipid in the coagulating agent for filled tofu are 14.0 to 26.0% by mass and 0.1 to 1.6% by mass, respectively.
(FR) L'invention concerne un agent coagulant pour tofu fourré (caillé de soja fourré), qui comprend une composition de type émulsion eau-dans-l'huile dans laquelle des phases aqueuses contenant chacune du chlorure de magnésium sont dispersées dans une phase huileuse de façon à former une émulsion, du ricinolate condensé de polyglycérine et un phospholipide étant présents en tant qu'agents émulsifiants dans l'agent coagulant pour tofu fourré, et les teneurs en chlorure de magnésium et en phospholipide dans l'agent coagulant pour tofu fourré étant de 14,0 à 26,0 % en masse et de 0,1 à 1,6 % en masse, respectivement.
(JA) 油相中に塩化マグネシウムを含有する水相が乳化分散した油中水型乳化組成物からなる充填豆腐用凝固剤であって、 該充填豆腐用凝固剤が乳化剤としてポリグリセリン縮合リシノレイン酸エステルとリン脂質とを含有し、 該充填豆腐用凝固剤中、塩化マグネシウムの含有量が14.0~26.0質量%であり、リン脂質の含有量が0.1~1.6質量%である、充填豆腐用凝固剤。
