(EN)There is disclosed an enzyme having a denaturing temperature of 70°C and above, with an optimum pH of 6-9 and a method of production thereof. In one embodiment, the method comprising the steps of: selecting and isolating at least one strain of at least one microorganism by means of enrichment technique; culturing the strain of the selected and isolated microorganism; and obtaining the enzyme from the culture of the strain thereof.
(FR)L'invention concerne une enzyme ayant une température de dénaturation de 70°C et plus, à un pH optimal de 6 à 9 et son procédé de production. Dans un mode de réalisation, le procédé comprend les étapes consistant à : sélectionner et isoler au moins une souche d'au moins un micro-organisme au moyen d'une technique d'enrichissement ; cultiver la souche du micro-organisme sélectionné et isolé ; et obtenir l'enzyme à partir de la culture de la souche.
