Abstract:
(EN) Provided are a microorganism that is useful as an expression host for γ-Glu-Val synthase and a method for producing γ-Glu-Val-Gly using γ-Glu-Val synthase that is expressed in the microorganism. Starting with Glu, Val and Gly, γ-Glu-Val-Gly is produced using γ-Glu-Val synthase that is expressed with the use of a bacterium such as a bacterium of the genus Escherichia, said bacterium having been modified so as to lower the activity of a protein (YBDK) encoded by ybdK gene, as an expression host.
(FR) L'invention concerne un micro-organisme qui est utile en tant qu'hôte d'expression pour la γ-Glu-Val synthase et un procédé de production de γ-Glu-Val-Gly au moyen de la γ-Glu-Val synthase qui est exprimée dans le micro-organisme. À partir de Glu, de Val et de Gly, la γ-Glu-Val-Gly est produite à l'aide de la γ-Glu-Val synthase qui est exprimée au moyen d'une bactérie telle qu'une bactérie du genre Escherichia, ladite bactérie ayant été modifiée de façon à abaisser l'activité d'une protéine (YBDK) codée par le gène ybdK, en tant qu'hôte d'expression.
(JA) γ-Glu-Val合成酵素の発現宿主として有用な微生物、及び同微生物で発現させたγ-Glu-Val合成酵素を用いたγ-Glu-Val-Glyの製造法を提供する。ybdK遺伝子にコードされるタンパク質(YBDK)の活性が低下するように改変されたエシェリヒア(Escherichia)属細菌等の細菌を発現宿主として発現させたγ-Glu-Val合成酵素を利用して、Glu、Val、及びGlyを原料としてγ-Glu-Val-Glyを製造する。
