Abstract:
(EN) The present invention addresses the problem of providing a meat which has a low saturated fatty acid content. It has been discovered that, as a result of feeding livestock animals a feed including Lactobacillus plantarum BB-PLT (lactic acid bacteria strain BB-PLT) (NITE BP-02097), the saturated fatty acid content of the meat is reduced and the monounsaturated fatty acid content of the meat is increased after cooking. Accordingly, the present invention relates to: Lactobacillus plantarum BB-PLT (NITE BP-02097); a livestock feed including said lactic acid bacteria; a method for rearing livestock for meat, said method being provided with a step in which livestock animals are fed said lactic acid bacteria; and a meat obtained from livestock animals reared using said rearing method.
(FR) L'invention a pour objet de fournir une viande dont la teneur en acides gras saturés est restreinte. Un aliment contenant un lactobacillus plantarum BB-PLT (souche de bactérie lactique BB-PLT) (NITE BP-02097) est administré à des animaux d'élevage, ainsi, la teneur en acides gras saturés après cuisson par chauffage est réduite, et la teneur en acide gras monoinsaturé est augmentée. L'invention concerne notamment un lactobacillus plantarum BB-PLT (NITE BP-02097), un aliment pour animaux d'élevage comprenant cette bactérie lactique, un procédé d'élevage pour viande alimentaire comportant une étape d'administration de cette bactérie lactique à des animaux d'élevage, et une viande alimentaire obtenue à partir d'animaux d'élevage élevés selon ce procédé d'élevage.
(JA) 本発明は、飽和脂肪酸含量が少ない食肉の提供を課題とする。Lactobacillus plantarum BB-PLT(乳酸菌BB-PLT株)(NITE BP-02097)を含む飼料を家畜動物に給与することにより、加熱調理後に飽和脂肪酸含量が減少し、一価不飽和脂肪酸含量が増加することを見出した。よって、本発明は、 Lactobacillus plantarum BB-PLT(NITE BP-02097)、該乳酸菌を含有する、家畜用飼料、該乳酸菌を家畜動物に給与することを備える、食肉用家畜の飼育方法、並びに、当該飼育方法により飼育された家畜動物から得られた食用肉等に関する。
