Abstract:
(EN) The invention relates to a method for producing sausage (S) and the like, using moulds (1) with two sides (2 and 3) with multiple cavities (4), in which the steps of stuffing (E.1), cooking (E.5) and cooling (E.7) the mixture are carried out, thus shaping the sausage (S), without requiring natural or artificial skins, and after removing the sausage from the mould (1), using a blade separator (D) in the sausage cutting step (E.9).
(FR) L'invention concerne un procédé de fabrication de saucisses (S) et analogues, utilisant des moules (1) à deux faces (2 et 3) avec cavités (4) multiples, où sont réalisées les opérations de remplissage (E.1), de cuisson (E.5) et de refroidissement (E.7) de la pâte, en vue de la formation des saucisses (S) sans nécessité d'utiliser des boyaux naturels ou artificiels, les saucisses retirées du moule (1) étant alors soumises à une opération de coupe (E.9) à l'aide d'un séparateur (D) à lame.
(PT) Refere-se a um processo de fabricação de salsichas (S) e similares, que utiliza moldes (1) de duas faces (2 e 3) com múltiplas cavidades (4) onde se dá as etapas de embutimento (E.1), cozimento (E.5) e resfriamento (E.7) da massa, atribuindo assim a conformação das salsichas (S) sem necessidade de tripas naturais ou artificiais, que retiradas do molde (1) são submetidas a etapa de corte (E.9) com o auxílio de um destacador (D) laminar.
