Abstract:
(EN) Provided is a flavor improving agent for food and beverages that have a powdered green tea flavor, with which the sweetness inherent to powdered green tea and the richness of high-quality powdered green tea can be imparted by adding a small amount of the agent to powdered green tea flavored food and beverages. The present invention is a flavor improving agent for food and beverages having a powdered green tea flavor, characterized by comprising: an epoxidized aliphatic unsaturated aldehyde represented by formula (1) (in the formula, the dashed bond indicates a single bond or a double bond, and the wavy bonds indicate the cis form or the trans form, or a mixture of the cis form and trans form at any ratio); or an alkyl pyrazine represented by formula (2) (in the formula, R1 is a methyl group or an ethyl group, and R2, R3 and R4 each independently indicates a hydrogen atom, a methyl group, or an ethyl group); or the epoxidized aliphatic unsaturated aldehyde and the alkyl pyrazine.
(FR) L'invention concerne un agent d'amélioration de l'arôme pour des aliments et des boissons ayant une saveur de thé vert en poudre, avec lequel il est possible de conférer la douceur inhérente au thé vert en poudre et la richesse du thé vert en poudre de haute qualité par l'ajout d'une petite quantité de l'agent à des aliments et des boissons ayant une saveur de thé vert en poudre. La présente invention concerne un agent d'amélioration de l'arôme pour des aliments et des boissons ayant une saveur de thé vert en poudre, caractérisé en ce qu'il comprend : un aldéhyde insaturé aliphatique époxydé représenté par la formule (1) (dans la formule, la liaison en pointillés indique une liaison simple ou une liaison double, et les liaisons ondulées indiquent la forme cis ou la forme trans, ou un mélange des formes cis et trans selon un rapport quelconque) ; ou une alkyl pyrazine représentée par la formule (2) (dans la formule, R1 est un groupe méthyle ou un groupe éthyle, et R2, R3 et R4 représentent chacun indépendamment un atome d'hydrogène, un groupe méthyle, ou un groupe éthyle) ; ou l'aldéhyde insaturé aliphatique époxydé et l'alkyl pyrazine.
(JA) 抹茶風味飲食品に少量添加することにより、抹茶が本来有する甘い香味、並びに高級抹茶が有する濃厚感を付与することができる抹茶の風味を有する飲食品の香味改善剤を提供する。 下記式(1)(式中、破線の結合は単結合又は二重結合を、波線の結合はシス型もしくはトランス型又はシス型とトランス型の任意の割合の混合物を示す) で表されるエポキシ化脂肪族不飽和アルデヒド、又は、 下記式(2)(式中、Rはメチル基又はエチル基であり、R、R、Rはそれぞれ独立して水素原子、メチル基又はエチル基を示す)で表されるアルキルピラジン類、又は、前記エポキシ化脂肪族不飽和アルデヒドと当該アルキルピラジン類とを含有することを特徴とする抹茶の風味を有する飲食品の香味改善剤である。
