Abstract

A process for the production of a puffed food product, including the steps of hydrating a seed and puffing said hydrated seed is provided. Puffing the seed includes exposing the seed to elevated temperature, and may include exposing the seed to elevated pressure. The process may further include heating the seed, such as boiling or simmering the seed in water, during hydration and/or prior to puffing. Also provided is an apparatus and a system for production of a puffed food product from a seed.

L’invention concerne un procédé de fabrication d'un produit alimentaire soufflé qui comprend des étapes d’hydratation d'une graine et de soufflage de ladite graine hydratée. Le soufflage de la graine consiste à exposer la graine à une température élevée, et peut consister à exposer la graine à une pression élevée. Le procédé peut en outre comprendre le chauffage de la graine, tel que l'ébullition ou la cuisson mijotée de la graine dans l'eau, pendant l'hydratation et/ou avant le soufflage. L'invention concerne également un appareil et un système de fabrication d'un produit alimentaire soufflé à partir d'une graine.
