The invention relates to a tool for manual or especially automatic removal of tenderloins from half-carcasses of slaughtered animals. The tool comprises a circular knife blade, a blade housing supporting the knife blade, and a movable knife blade protector. The tool is connected to a motor capable of driving the knife blade. A tenderloin is partly cut free with the knife, the knife blade protector is activated to protect the knife blade and the tool is used to pull the tenderloin free from the half-carcass without damaging the tenderloin with the knife. The tool can be arranged on a robot and can be used for automatic removal of tenderloins from half-carcasses at slaughterhouses.

L'invention concerne un outil pour l'enlèvement manuel ou notamment automatique de filets de demi-carcasses d'animaux abattus. L'outil comprend une lame de couteau circulaire, un boîtier de lame supportant la lame de couteau et un protège-lame de couteau mobile. L'outil est raccordé à un moteur capable d'entraîner la lame de couteau. Un filet est partiellement découpé à l'aide du couteau, le protège-lame de couteau est activé pour protéger la lame de couteau et l'outil est utilisé pour détacher le filet de la demi-carcasse sans endommager le filet avec le couteau. L'outil peut être agencé sur un robot et peut être utilisé pour l'enlèvement automatique de filets de demi-carcasses dans des abattoirs.
