(EN)The present invention addresses the problem of providing a simple and versatile method for stabilizing 2-O-α-D-glucosyl-L-ascorbic acid in an acidic aqueous medium. The problem is solved by providing a method for stabilizing 2-O-α-D-glucosyl-L-ascorbic acid in an acidic aqueous medium, said method characterized in that 2-O-α-D-glucosyl-L-ascorbic acid is made to coexist with one or more stabilizers selected from C4–6 sugar alcohols, glucosyl fructose and sugar alcohols thereof, sugar alcohols of gluco-trisaccharides, glycosyl-trehalose, derivatives of cinnamic acid, derivatives of gallic acid and catechin, tartaric acid and salts thereof, amino acids, and peptides.
(FR) L'invention concerne un procédé simple et à usages multiples permettant de stabiliser un acide ascorbique 2-O-α-glucosyl-L dans un milieu aqueux acide. Plus spécifiquement, ce procédé de stabilisation d'un acide ascorbique 2-O-α-glucosyl-L dans un milieu aqueux acide se caractérise en ce qu'un acide ascorbique 2-O-α-glucosyl-L se trouve avec un ou plusieurs agents de stabilisation choisis dans le groupe comprenant: alcools de sucre C4 à C6, glucosyl fructose ou aclools de sucre de celui-ci, alcools de sucre de gluco-trisaccharides, glycosyl-threhalose, dérivés d'acide cinnamique, dérivés d'acide gallique ou de catéchine, acide tartrique ou sels de celui-ci, acides aminés et peptides.
